Blinis are one of the best-known classics of Russian cuisine. These soft, fluffy mini pancakes are often served with caviar, sour cream, or other toppings. This recipe combines true elegance: homemade blinis, silky Crème fraîche, and luxurious Beluga caviar. A perfect appetizer for festive occasions or sophisticated dinners.
Ingredients (for about 4 servings)
Dissolve the yeast in lukewarm milk with the sugar. Let it sit for about 10 minutes until bubbles form.
In a bowl, mix both flours, add the egg yolk, melted butter, and the yeast mixture. Stir into a smooth batter.
Beat the egg white with a pinch of salt until stiff, then gently fold it into the batter. Cover and let rise in a warm place for about 45 minutes.
Heat a small pan, melt a little butter, and spoon small portions of batter into the pan. Cook over medium heat until golden brown on both sides. Drain briefly on kitchen paper.
Top each warm blini with a dollop of Crème fraîche, sprinkle with finely diced onion and chives. Finally, carefully add the Beluga caviar and serve immediately.
Blinis taste best when served fresh and warm. For variety, try other types of caviar, such as salmon roe or trout roe.
